Meal Key: No Cook Tomato Sauce
It is HOT in DC (and all of the surrounding areas) right now. Weather this hot makes me only want to eat ice cream and ice pops, and I will do anything not to have to turn on the stove or the oven. So, I thought I’d share this recipe adapted from Smitten Kitchen. If this still sounds like too much cooking in this heat (feels like 105 right now), ice cream and take out are a great option!
No Cook Tomato Sauce
Ingredients
3 lbs. of fresh tomatoes (any king will work so choose what you like)
2 Cloves Garlic, sliced
Minced Vegetables (optional)
Salt and Pepper
Fresh Basil
Wash tomatoes and then cut them in half. Drain the liquid and seeds from all but a few otherwise your end product will be too watery.
Use a box grater or food mill to break up the tomatoes into a large bowl. I used a food mill because I don’t own a box grater but the original recipe used a box grater so either will work.
If you aren’t adding any minced vegetables and like the taste of raw garlic, add the garlic to the bowl. If you are using the minced vegetables or don’t like the taste of raw garlic this is where you need to turn your stove on. Sauté the garlic and vegetables in a few tablespoons of olive oil until tender. Add to tomatoes.
Mix everything together. Add salt, pepper, and fresh basil to taste. Let sit for a few hours so all of the flavors have time to meld together.
Serve with pasta or if you really don’t want to turn your stove on with bread. Enjoy!
